Hot red fruits

This red fruit cream is a sweet and enveloping preparation, perfect to serve over fiordilatte ice cream. It can be prepared in a few minutes: perfect for closing a dinner, even at the last minute.

  • 500 gr of mixed berries
  • 40 grams of sugar
  • 120 grams of dextrose
  • 2 gr of pectin or agar agar
  • 100 gr of water


We place the berries in a saucepan with water, and cook over low heat. The water will prevent the fruit from sticking to the bottom, but it is important to stir from time to time in any case. In another container we sift the sugars and the gelling agent. As soon as the red fruits begin to boil, sprinkle the sugars together while continuing to mix. We let the sauce cook until it reaches the desired consistency.
